Does anyone know why there are so many new Mexican restaurants opening?

Is this local or a national trend? Seems like this started over 10-20 years ago but I am seeing more and more now. Kind of seems like it was Chinese restaurants that grew in popularity and now its Latin American food. I understand Chipotle is probably doing well but is there that much demand for Mexican food right now?
